1. Wash & remove head, veins & legs from prawns. Place in bowl with lemon juice, paprika & chopped parsley. let rest.
  2. Slice garlic cloves horizontally. With a small knife cut vertically down chilli without separating from the main body. Finely chop parsley.
  3. Combine white wine vinegar and sugar in a bowl.
  4. Heat oil in a frying pan (preferably cast iron) at mid/high heat
  5. Once oil is hot place sliced garlic cloves, whole chilli & chilli flakes
  6. Once Garlic has begun to brown add prawns.
  7. Fry until pink (cooked..approx 3-4 mins).
  8. Add white wine vinegar and sugar mix into same prawn pan (please be careful as there will be spitting of oil)
  9. Fry off and reduce until a sweet sticky reduction is formed (approx 3 mins)
  10. Remove from heat.
  11. Sprinkle chopped parsley
  12. Enjoy 😉
